So this post is truly reflective of my college side but definitely hits the spot. This recipe for Rarmonara Noodles is a hybrid of your standard ramen noodle soup and spaghetti carbonara (for those of you not familiar with carbonara, it is a comforting and decadent Italian pasta dish with a sauce comprised of raw eggs that cooks once introduced to the hot pasta). And just because this recipe features ramen noodles and some of you may feel that you are "above that", I challenge you to keep reading. This is one of my favorite snacks/quick meals that is ready to eat in under 10 minutes. You can't beat that! (especially when you come back from the bar and hungry at 2am...)
For these Rarmonara Noodles, you will need:
1 package ramen style noodles w/seasoning packet (I use Shin Ramyun "gourmet spicy flavor")
1 large egg
Fill a small to medium saucepan with enough water to submerge the noodles in and bring to a boil. While waiting for the water to boil, whisk the egg in a small bowl and set aside. Once boiling, add the noodles and cook for about 3 minutes. Once ramen is done cooking, reduce the burner to low, drain the noodles in a colander and return to the pot off the heat. Add the seasoning packet (I use about half of the packet because the Shin Ramyun is suuuper spicy) and stir the noodles around with a spoon to ensure that the noodles are evenly coated with the seasoning. Finally, add the whisked egg and stir the noodles around until they are evenly coated (about 20 to 30 seconds). If you are not sure if the egg has been cooked by the residual heat of the noodles, stir the noodles for about 5 to 10 seconds over the burner that you set to low heat (but NO MORE than 10 seconds, and make sure to keep stirring or else you may get scrambled eggs...)
You are now ready to dig in! For some extra creaminess, feel free to add some grated Parmesan cheese. Personally, I like to add some diced scallions for some oniony bite and diced tofu if I feel like making it a meal. Have fun experimenting and share your comments!
